Grade 12 Food commodities

Hospitality practice questions and a worked example

Grade 12 Hospitality Studies questions on food commodities come from the final NSC exam, and many are based on a photo of a dish. The questions here ask you about meat cuts and cooking methods, short crust, choux, puff and phyllo pastry, gelatine desserts, custards and meringues, and preservation methods such as smoking, bottling and pasteurisation. They come from the Department of Basic Education’s Grade 12 Hospitality Studies NSC papers for November 2023, November 2024 and November 2025, each with the answer from the marking guideline.

Worked example

SECTION A: SHORT QUESTIONS QUESTION 1 1.5.2 Identify TWO cuts below that are obtained from the forequarter of a beef carcass. Write only the letters (A–D). A CHUCK B RUMP C SILVERSIDE D FLAT RIB

Answer & explanation

A – CHUCK D – FLAT RIB (Any order)
To answer this question, you need to know which cuts of beef come from the forequarter of the carcass. The forequarter includes parts like the chuck and the rib. 1. Option A, Chuck, is a cut from the forequarter. It comes from the shoulder area of the beef carcass. 2. Option D, Flat Rib, is also from the forequarter. It is part of the rib section. Options B (Rump) and C (Silverside) are from the hindquarter, so they are not correct for this question. Therefore, the correct answers are A and D.

Common mistakes

  • Choosing a dry-heat method for a tough cut. Cuts with a lot of connective tissue, such as chuck or brisket, need a combination method such as braising so the collagen breaks down into gelatine.
  • Adding extra flour to choux paste. It changes the ratio, and the pastry ends up heavy, starchy or collapses.
  • Adding fruit to jelly too early. The marking guideline says to let the jelly thicken to egg-white consistency first, so the fruit does not sink or float.
