Grade 12 Food and beverage service

Hospitality practice questions and a worked example

Grade 12 Hospitality Studies questions on food and beverage service come from the final NSC exam. The questions here ask you about service styles and table service, from clearing plates and crumbing down to the order in which guests are served at a formal function, wine types, labels and serving temperatures, liquor licences, and the rules for preparing cocktails and mocktails. They come from the Department of Basic Education’s Grade 12 Hospitality Studies NSC papers for November 2023, November 2024 and November 2025, each with the answer from the marking guideline.

Common mistakes

  • Clearing plates before everyone has finished. The marking guideline says to wait until all the guests at the table are done and to clear all the plates at the same time.
  • Mixing up on-consumption and off-consumption licences. A bottle store’s off-consumption licence only allows liquor to be drunk elsewhere.
  • Stirring a built (layered) drink. The ingredients are floated on top of each other and the finished mocktail is not stirred.
